Fermented in two tonne open top vessels with a very high proportion of whole berry fruit, with a single tank of 100% whole berry fruit undergoing carbonic maceration for enhanced aroma and palate complexity. Pressed to stainless to settle before the addition of 6% Pyrenees Shiraz prior to bottling in Feb '16
Fruit for this Heathcote Nero d'Avola is grown on the Chalmers Vineyard of Colbinabbin. A juicy grape making for a juicy wine with livewire fruit and persistent sass.
